Greek Chicken Meatballs with Homemade Tzatziki
Ingredients:
For the Meatballs:
1 lb ground chicken
1/3 cup breadcrumbs (panko or regular)
1/4 cup finely chopped red onion
2 cloves garlic, minced
1 egg
1/4 cup chopped fresh parsley
1 teaspoon dried oregano
1/2 teaspoon dried thyme
Salt and pepper to taste
For the Tzatziki Sauce:
1 cup Greek yogurt
1 cucumber, peeled, seeded, and grated
2 cloves garlic, minced
1 tablespoon fresh dill, chopped
1 tablespoon fresh mint, chopped
1 lemon, juiced
Salt and pepper to taste
Instructions:
Make the Meatballs:
In a large bowl, combine the ground chicken, breadcrumbs, red onion, garlic, egg, parsley, oregano, thyme, salt, and pepper. Mix well.
Form the mixture into small meatballs.
Heat a large skillet with olive oil over medium heat. Cook the meatballs until browned on all sides and cooked through.
Make the Tzatziki Sauce:
In a bowl, combine the Greek yogurt, grated cucumber, garlic, dill, mint, lemon juice, salt, and pepper. Mix well.
Serve: Serve the meatballs with the tzatziki sauce. You can also serve them over rice, pasta, or in pita bread.
Tips:
For a crispier exterior, you can bake the meatballs in the oven at 400°F (200°C) for 20-25 minutes.
You can adjust the spiciness of the meatballs by adding red pepper flakes to the mixture.
To make the tzatziki sauce even creamier, you can strain the grated cucumber to remove excess liquid.
